The G-8 Takohiki features a White Steel #3 core w/soft iron blade and a magnolia Wood handle with buffalo horn bolster. Takohiki knives are long, straight blades for slicing and serving sashimi and sushi. Long ago, the sushi chefs considered that using a pointed blade to serve the fish might appear threatening to their customers, and so they lobbed off the point to make a square-blunt end. The takohiki is certainly a polite serving knife.
