The KC-171 is a Gyutou of the AUS-10 PRO Series. This powerful Japanese-style chef knife is formidable, as its razor-sharp edge delivers uniform chops, slices, and minces. Perfect for a variety of vegetables, fruit, herbs, and meats, this knife is sure to be a favorite. The extra long blade length will get the job done in short order.

 

About the AUS-10 PRO Series:

Knives of this series are of extra fine quality. They have high carbon stainless steel AUS-10 blades. This is a magnificent performance blade which contains 0.95 - 1.10% carbon and a well-balanced composition of molybdenum and vanadium that enables knives of this series to have professional-use details. This stainless steel possesses excellent rust-resistance and edge retention, with a hardness of HRC 59 - 60. The basic and simple handle gives it an excellent grip and will stand up to whatever you put it to. The black wood handle has full-tang construction with a welded stainless steel bolster. Proudly made in Seki, Japan.
