The KC-727 is a petty knife which features a AUS-8 stainless steel blade and a wood handle that has a welded stainless steel bolster. It belongs to the Kanetsune Granshe SX series. The petty knife is a Japanese-style paring/utility knife. It is the perfect tool in the hand for peeling and preparing fruits and vegetables, as well as beautifying dishes with elegant cuts and garnishes. It can also be used as a petite chef knife, which is ideal for smaller hands.
About the Granshe SX Series:
Granshe SX-series knives are created with AUS-8 stainless steel blades. The added molybdenum and vanadium give this line a greater rust resistance and hardness, providing excellent edge retention to HRC 57-58.
