To make the KC-813, many processes and many craftsmen are involved, and no effort is spared. It takes about a year to be completed!
Wa-santoku are all-purpose Japanese knives, and are used in much the same way as a French chef knife, only the wa-santoku is capable of more precise slices. Further, the wa-santoku has a more rounded front end. Literally, it means "three-purpose", for the knife is your multipurpose tool for meat, fish and vegetables.
These feature an amazing 101 layers of Damascus with an abrasion-resistant, high speed powder steel core to an HRC: 61±0.5. The handle is black wood w/a red micarta ring handle. You will appreciate the incredible sharpness of the blade. It will outperform due to a sophisticated technique, backed by years of abundant experience and knowledge.
The classy octagonal handle, "八角柄 Hackaku-e", is polished to fascinating elegance. The handle end is engraved with the Kanetsune, Seki brand logo mark "Kumadori".
