The KC-855 Minamo-kaze Kiritsuke Knife features a 63-layer damascus w/high carbon stainless steel core blade. The handle is composed of red wood with black micarta ring.
The Japanese kiritsuke is a typically longer knife with a single bevel blade that is ground on only one side to razor sharpness. It has a stylistic reverse-tanto tip which reminds one of the samarai sword. This design offers a super long and straight edge like a yanagiba-meets-usuba, that perfects preparations of soft meats such as chicken, duck, and fish, while slaying through delicate herbs and vegetables.
The Minamo-Kaze Series:
Minamo-kaze is named for the beautiful scenery which occurs in nature when "a pleasant wave pattern is created on a calm water surface by a soft breeze". The blade is 63 layers of damascus w/Japanese high carbon stainless steel core, a high quality material proudly made in Japan. The high grade of razor-sharpness lasts a long time. The handle end is engraved with the Kanetsune Seki brand logo mark "Kumadori". The handles are made of red wood w/black micarta rings. These come in a classy wooden box, showcasing a Japanese tradition.
