The KC-924 Petty knife features a blue steel #2 / SUS410 stainless steel blade with wood handle and stainless steel bolster. The petty knife is a Japanese-style paring/utility knife. It is the perfect tool in the hand for peeling and preparing fruits and vegetables, as well as beautifying dishes with elegant cuts and garnishes. It can also be used as a petite chef knife, which is ideal for smaller hands.
About the YH-3000 Series:
Knives of the YH-3000 series have beautifully hammered "Tsuchime" finished blades which have an extremely sharp Aogami-2 (Blue steel #2) cutting core w/SUS-410 stainless steel to provide excellent edge retention, to a hardness of HRC 61-62. "Tsuchime", is a Japanese-style hammer finish and helps to release foods quickly from the blade while cutting, making the meal-prep process quicker and more efficient. The beautifully finished black wood handles are basic and simple in shape and provide excellent grip while standing up to anything you put them to! These have half-tang construction with a stainless steel bolster. Proudly made in Seki, Japan.
