The G-12 Takohiki features a white steel #3 core blade. The magnolia wood handle is ornamented with a water buffalo horn bolster, making this an elegant work of functional art. Takohiki knives are long, straight blades for slicing and serving sashimi and sushi. Long ago, the sushi chefs considered that using a pointed blade to serve the fish might appear threatening to their customers, and so they lobbed off the point to make a square-blunt end. The takohiki is certainly a polite serving knife.
