The KC-465 Kiritsuke features a high-carbon blue steel #2 core w/11-layers Damascus blade and a red sandalwood handle. The kiritsuke knife has a wide and sharp point. It combines the advantages of both Kengata and Nakiri. These blades have grown in popularity with the rise of the santoku as people learn more about the amazing capabilities of this knife. Especially a powerful tool for vegetables because the tanto-type point and wide heel work well to get into corners and make beautiful long designs. Also great to use before the paring knife process for rough design. Can be used for soft meats, such as fish, duck, and chicken.
