The KC-921 Santoku features a blue steel #2 / SUS410 stainless steel blade with wood handle and stainless steel bolster. Santoku are all-purpose Japanese knives, and are used in much the same way as a French chef knife.
About the YH-3000 Series:
Knives of the YH-3000 series have beautifully hammered "Tsuchime" finished blades which have an extremely sharp Aogami-2 (Blue steel #2) cutting core w/SUS-410 stainless steel to provide excellent edge retention, to a hardness of HRC 61-62. "Tsuchime", is a Japanese-style hammer finish and helps to release foods quickly from the blade while cutting, making the meal-prep process quicker and more efficient. The beautifully finished black wood handles are basic and simple in shape and provide excellent grip while standing up to anything you put them to! These have half-tang construction with a stainless steel bolster. Proudly made in Seki, Japan.
