The KC-710 Honesuki-Maru features a NKS32 high carbon steel blade and a wood handle with steel bolster. Japanese honesuki-maru knives are compact beauties. Unlike the honesuki-kaku knives, which arere most perfect for filleting poultry due to the perfected heel that cuts through cartilage, these do not have that heel. They are also sufficient for these purposes, but are most suited to meats other than poultry.

Minamoto Kanemasa M-series knives have carbon steel blades made of NKS32, which provide excellent edge retention, HRC 59-60. The basic and simple handles have excellent grip and will stand up to anything you put it to. Professional quality, these have of a full-tang construction with welded bolster. Proudly made in Seki city, Japan.
