The KC-905 Usubagata features a VG-10 stainless steel core/17-layer Damascus blade and a mahogany wood handle with stainless steel bolster. The usubagata is popular in Kyoto, perfect for vegetable preparation, and similar in design to the nakiri.
About the KC-900 Series:
Knives of the KC-900 series feature beautifully hammered "Tsuchime"-finish Damascus-clad blades made of VG-10 cutting core w/17 layers stainless steel, which provides excellent edge retention to a hardness of HRC 59 - 60. "Tsuchime", is a Japanese-style hammer finish and helps to release foods quickly from the blade while cutting, making the meal-prep process quicker and more efficient. Full-tang construction, with welded bolster, delivers a professional experience. Proudly made in Seki city, Japan.
